Potato Grilled Pork Ribs Recipe

Grilled pork ribs  are one of those delicious dishes that are quick and easy to prepare. They are ideal for a last minute dinner with friends, or day to day, when you don’t have much time to cook.

This traditional Spanish dish is perfect for the winter, but you can eat it all year round. In this article, we will see  some ideas for making a simple recipe for pork ribs cooked with potatoes.

The main thing is to choose the right meat

The ingredients of this meal are simple and the undisputed protagonist is the pork chop. It  is therefore important to choose good quality ribs.  One option that gives the dish even more flavor is to choose Iberian pork ribs.pork ribs

You can also buy the whole ribs.  In this case, you need to separate the ribs with a very sharp knife. The task may seem difficult, but in reality it is not, you just need to have a little patience.

The importance of seasoning and time

It is very important to season the ribs and set them aside for more than two hours. This way the meat will achieve the desired flavor and when cooked the result will be a dish with a lot of flavor.

In this sense, the ideal is to leave the ribs generously spread with the marinade overnight, but they will also have a certain taste in a few hours. Of course, it will all depend on how much time you have.

To marinate the ribs, add these ingredients: onion, garlic, cumin, salt, pepper, dried oregano and a drizzle of olive oil. Once the mixture has acquired a pasty consistency,  rub the ribs with it. 

This step should be done carefully to cover all sides of the rib and done in a covered container (you can also use a plastic bag).

Tasty ribs cooked with potatoes

Ingredients

  • 3 cloves of garlic
  • 6 potatoes (400 g)
  • 1 red pepper (30 g)
  • 1 green pepper (30 g)
  • Salt, pepper and olive oil
  • 1 kilo of chopped pork ribs
  • 2 small onions or one medium (50 g)
  • 2 teaspoons of sweet paprika (10 g)
  • 1 liter and a half of homemade meat broth (prepared by boiling bones or pieces of meat, onion, celery and carrot in plenty of water for 30 or 40 minutes)

Preparation

  1. Finely chop the peppers, onions and garlic. 
  2. Peel and cut the potatoes into pieces. Reserve in cold water.
  3. In a large skillet, put the olive oil and when it is hot, brown the ribs on all sides. 
  4. In the same oil, brown the peppers, onions and garlic for about five minutes.
  5. Add the ribs and potatoes.
  6. Season and add the paprika.
  7. Cover with the meat broth (and add water if necessary).
  8. Leave on high heat until it boils, then cook over medium heat for about 30 minutes.
  9. Serve and enjoy the delicious pork chops.

Delicious pork ribs cooked in white wine

It’s a slightly different version of the traditional recipe. In addition to the basic ingredients, we add tomato, carrot and white wine.  It is also delicious and very easy to prepare.pork ribs

Ingredients

  • 1 onion (30 g)
  • 6 potatoes (400 g)
  • 1 carrot (20 g)
  • 1 tomato (30 g)
  • 3 cloves of garlic
  • Olive oil (according to taste)
  • A kilo of pork ribs.
  • 1 red or green pepper (30 g)
  • 1 glass of white wine (200 ml)
  • Laurel, salt and pepper (to taste)

Preparation

  1. Finely chop the onion, garlic, pepper and carrot.
  2. Peel the tomato and cut it into small cubes.
  3. Put a little olive oil in a saucepan and when it is hot, add the onion and garlic. Leave to brown for 2 or 3 minutes.
  4. Then add the pepper and carrot. Continue to brown for 2-3 more minutes.
  5. Add the tomato and stir. In case there is excess acidity, you can also add sugar.
  6. Then add the chopped ribs, stir for a few minutes and soak with the glass of white wine.
  7. Leave on high heat until the alcohol has evaporated (about 2 minutes).
  8. Then season with salt and add a little water (if necessary to cover the preparation).
  9. Add the bay leaf and wait for the mixture to boil. Lower the heat and cover.
  10. Cook for about 30 minutes.
  11. Meanwhile, peel and cut the potatoes into pieces.
  12. Once this time has elapsed, add the potatoes and then cook for another 15 minutes. Add a little water if necessary.
  13. Finally, serve and enjoy the pork chops.
